Clay has been used to make cooking pots since the first Neolithic farmers made round-bottomed pots from coils of clay for stewing food at the edges of open fires. When the coal-fired range overtook the hearth as the primary heat source for cooking, potters responded by developing flat-bottomed dishes, casseroles and a whole plethora of vessels for puddings and pies to cater for the new technology.

Pots in the Kitchen traces the development of handmade pots used for cooking in Britain from the beginning of the twentieth century, particularly describing the contributions made by Bernard Leach, Michael Cardew, and Ray Finch. However, the main thrust of this book records the many striking examples made by contemporary potters working not only in Britain, but also in many other countries, which are sumptuously illustrated with over 300 full-colour photographs.

Clay pots from Morocco, South America, Spain and India, casseroles, baking dishes, dishes for puddings and pies, together with many humble pots that have never been pushed into the limelight, such as cutlery drainers, colanders and lemon squeezers, are all celebrated and documented in this book as never before.

Particular attention is given to France and French cooking, which have been a continual influence on British kitchens. Diables, tripières, tians, marmites, daubières and many other French pots are explained and illustrated, together with the role played by cookery writers such as Isabella Beeton, Elizabeth David and Terence Conran, who introduced French pots to the British people through their writing and their shops.

With special features illustrating 'Potters at Work', this book shows how leading makers create their unique handmade pots in step-by-step sequences, and shares their working methods, clays, slips and glaze recipes. Practical guidance is also given on how to cook with handmade pottery and, for potters, there is essential information about clay bodies and firing pots for kitchen use.

Pots in the Kitchen is a celebration of useful pots, written not only as an inspiration to students, potters and collectors of pots, but also as an encouragement to cooks, to stimulate an interest in, as well as a better understanding of, handmade pottery created for cooking and preparing food by studio potters. The book aims to stimulate an increased use of handmade pottery in the kitchen, which can only enhance and complement fine food.
